Simple Meal: Ginger Chicken with Oyster Sauce



It was supposed to be my husband to cook this dish but since he needs to stay a few more hours at the office he asked me to do it instead.

I don't want to cook it since I haven't cooked it before (comfort zone) but since he insisted then might as well learn a new thing and cook it.






Ingredients:
1. 1/4 kilo boneless chicken cut into 2inch cubes
2. 2 tablespoon cornstarch
3. 2 tablespoon oyster sauce
4. 2 tablespoon rice wine (alternative is apple juice - don't ask me, it was Sweets' research)
5. 2 tablespoon soysauce
6. 1 teaspoon sugar (white / brown will do)
7. 2 tablespoon ginger (thinly sliced, like match sticks)
8. 2 tablespoon finely chopped garlic
9. 5 leaves of spring onions, cut into 2inches long
10. 1/8 cup water
11. 3 tablespoon cooking oil 
12. Salt and pepper to taste

Very simply done:

1. In a separate bowl, pour in the chicken, 1 tablespoon of cornstarch and 2 tablespoon of oil - mix well
2. For the sauce, in another separate bowl, pour in all the liquid ingredient (except for the water) - Oyster sauce, soy sauce, rice wine, sugar and cornstarch. Mix well and set aside.
3. Heat the pan, when the heat is just about right (we all know how to figure that one out) then pour in your oil and wait until again it's hot.  Saute the ginger for 35-40 seconds and get your ginger out of the pan.  (Ginger tastes bad if its burnt).
4. Saute your garlic and until it's golden brown, pour in the chicken and wait until it's golden brown.  Since this is not deep fried, turn your chicken back and forth so that it will not burn.
5. When the chicken is evenly cooked, give your sauce another stir and pour it in. Then continue to mix the sauce with the chicken for another 3 - 5 minutes.
6. Add water and continue to mix for another 2 minutes until the sauce thickens. Add salt and pepper to add to the taste.
7. Add the spring onions and continue to mix for 30 seconds.
8. Serve while hot with steamed rice.


Note:
~ If you like more ginger taste then add more ginger
~ If you like more saucy then add more water or cornstarch

Yield: 2 hungry persons!
